Deluxe Mac & Cheese

Deluxe Mac & Cheese


Ingredients:
8 oz small elbow macaroni - cooked (can use either gf or regular pasta)
2 cups large curd cottage cheese
1 cup sour cream
1 egg slightly beaten
3/4 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons Dijon or prepared spicy brown mustard
2 1/2 cups shredded sharp cheddar cheese (about 10 ounces)

Preheat oven to 400 degrees
Cook macaroni according to package directions.
Meanwhile in a casserole dish, The Demarle flower mold  or the Large Round Demarle mold would be perfect for this dish…(mixing bowl that is oven safe) combine the cottage cheese, sour cream, egg, salt, pepper, mustard and 2 cups of the cheese.

Drain the macaroni and toss with the cheese mixture. Spread evenly in the baking dish, top with the remaining 1/2 cheese. Bake uncovered 30-35 minutes or till set. If it browns to quickly cover with foil after 20 minutes of baking.

I like to add chopped crystallized ginger (add a very unique flavor). I also like baq-b-que sauce on the top of my macaroni, my wife like hers just plain.
