GF Meatloaf with Quinoa pilaf

Ingredients:
2 beaten eggs
3/4 cup milk
2/3 cup of fine dry gf bread crumbs
2 tablespoons grated onion
1 teaspoon salt
1/2 teaspoon ground sage
dash of pepper
1 1 /2 pounds of hamburger

Topping
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard
1/4 teaspoon nutmeg
mix well and set aside.

Quinoa Pilaff

Ingredients:
2 tablespoon butter
2 cloves of garlic (minced)
2 tablespoons minced onion
1 cup Quinoa, thoroughly rinsed
2 cups water or chicken broth (will increase sodium!)
1/4 cup slivered almonds
chives to taste

In a 2 quart saucepan heat butter, garlic and onion saute over medium heat for a few minutes. Add quinoa, saute siring for 5 minutes. Add water or chicken broth, bring to a boil, cover and reduce heat to low and simmer for 12 minutes or until all the liquid has been absorbed. If just using water add salt to taste now. Remove from heat, fluff, add almonds cover and let stand for 5 minutes before serving. Quinoa is a good substitute for rice pilaf.



Mix ingredients together (I like to make mini meat loaves). Form round balls 2-3" each. Place on a broiler pan (so the fat can drain off) Bake at 350 degrees 1 hour if in a loaf pan 40 minutes if minis. Add topping and bake another 10-15 minutes.
