My wife Carolyn was and has been my inspiration. She found out that she was gluten intollerent about 4 years ago, at that point she had numerous health issuses and asked me if I wouln't mind doing more of the cooking. So I started creating gluten free recipes for her and started taking pictures of my work. What you see is a complement to her ingenuity and my cooking skills...Enjoy

This morning I had some left over mashed potatoes so I decided i wanted to make some potato pancakes. I added 1 egg and 1/2 cup gf flour to the mashed potatoes....They turned out fantastic.....
