Quinoa Morning Muffins

Quinoa Morning Muffins
Dry ingredients:
1 cup quinoa flour
1 cup rice flour
2 teaspoons xanthan gum
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/2 cup sugar
2 teaspoons cinnamon
1 teaspoon nutmeg

Wet ingredients:
3 eggs beaten
1/2 cup milk, hot
1 cup butter melted (2 sticks) or olive oil

Optional ingredients:
1/2 cup plain walnuts
1/2 cup yellow raisins
1/2 cup gluten free granola

Preheat oven the 400°f  grease the bottom of your muffin tray. Mix dry ingredients, add nuts, raisins,or gluten free granola if you choose. Mix liquids. Make a well in the dry ingredients and stir in liquids. Spoon Batter into muffin cups, half full. Bake for 20 minutes.
Yield 12 muffins
