GF Apricot and Pineapple Cobler

I had a pile of apricots that I needed to use up along with some pineapple chunks. So I made a GF cobbler last evening.

Ingredients:
7 apricots cut into small chunks
1/3 cup pineapple chunks
1 cup sugar
1 cup GF flour mix
1/4 teaspoon salt
1 egg
1/2 cube butter (melted)

Put the fruit into an 8x8x2" pan covering the bottom
mix up the sugar, flour, egg, salt in a bowl until crumbly
pour crumbly mixture over fruit.
Spoon melted butter over crumble

Bake @ 350 degrees for 1 hour until golden brown. Serve with ice cream of whipped cream or just eat plain.....
