I know that this sounds like a lot of work when you can go down to the store and for just a few dollars you can by a bag of chips...however fresh chips are just out of this world...I started with just 2 potatoes, washed and peeled them then sliced them paper thin on my mandolin...I fried then at around 375 degrees for 20 to 30 seconds on each side in canola oil...sprinkled them with salt and a little apple cider vinegar...then served them up fresh and hot...I could not take a picture fast enough before half of them were eaten by my wife....
