Surprise GF Donut Holes


Surprise your friends with the lightness of these little round doughnut balls. Best served hot, but they still taste good cold (if they last that long).

Ingredients:
1 cup water
1/2 cup (1 stick) butter or margarine
1 cup potato starch flour
1 teaspoon sugar
1/4 teaspoon salt
4 eggs
oil for deep fat frying
cinnamon sugar and/or powered sugar, milk drizzle

In a 2 quart saucepan, heat water and butter until the mixture boils. Remove pan from heat and stir in all at once, the combined flour, sugar, and salt. Continue stirring until the mixture forms a ball and pulls away from the side of the pan. Then, with an electric mixer, beat in the eggs, one at a time, beating well after each addition.

Meanwhile, heat the oil for deep-fat frying. Use either an electric skillet set at 375 degrees or an automatic deep-fry kettle (such as Fry-Daddy). Use at least 1" of oil in the skillet or add oil up to the maked line on the automatic fry kettle.

Drop the batter into the heated oil by small rounded teaspoonfuls, a few at a time. Fry until they are golden brown, turning them to brown evenly. They will puff to about 1 1/2 inches as they cook (about five minutes altogether). Remove and drain on paper towels. While still warm, shake in a plastic bag with cinnamon sugar (2 tablespoon sugar to 1/2 teaspoon cinnamon) or coat with a drizzle topping. (1/2 cup powdered sugar, 1 /2 teaspoon milk mix till smooth and just drips off of spoon)
