Mighty Tasty Hot Cereal Muffins

Mighty Tasty Hot Cereal Muffins (yes it is made with the hot cereal)

Ingredients:
1 1/4 cups gluten free flour blend (I use Bob’s Red mill gf baking flour)
3/4 cup Bob’s Red Mill gf mighty tasty hot cereal blend
1/2 cup sugar
½ teaspoon xanthan gum
3/4 cup milk (I use powdered milk or soy milk)
1/4 cup vegetable oil
1 egg
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla (optional but well worth it)

Preheat oven to 400 degrees. In a large mixing bowl, combine all the dry ingredients then pour in the wet ingredients. Stir together until all ingredients are moistened, Pour batter into a Demarle straight muffin mold filling cups 3/4 full. Bake 18-20 minutes or until center is firm to the touch. Yield: 12 muffins
