Yakatori Chicken

Yakitori (Skewered Grilled Chicken)
Yakitori is a popular snack in Japan ( I ate lots of this while in Guam)

Ingredients:
2 lbs chicken thighs or breast
5 green onions
1 can of pineapple chunks

Yakitori Sauce:
4 tablespoons sugar
2 tablespoons lemon juice
2 tablespoons vegetable oil
1 clove of garlic, pressed
3/4 cup soy sauce or (wheat free tamairi)
2 tablespoons Worcestershire sauce

How to make:
1. Cut chicken into bite-sized pieces.
2. Cut green onions into 1-inch lengths.
3. Mount 3 or 4 pieces of chicken, green onion and pineapple onto each bamboo skewer, leaving room for a "handle".
4. Wash hands thoroughly with soap and water after handling the raw chicken.
5. Make the yakitori sauce by mixing the sugar, lemon, oil, garlic and soy sauce (or tamari) together in a saucepan. Boil until reduced to 2/3 of the original amount.
6. Baste the skewers with the yakitori sauce and broil them in the oven or over the grill. Baste the meat in yakitori sauce 2-3 times while cooking.
7. Serve with Lemon juice or just eat plain.

Note: soak the bamboo skewers for 10 to 20 minutes to so they won't catch fire and burn.
