GF Yogurt Pancakes

Gluten Free Yogurt Pancakes with fresh raspberry syrup

Ingredients:
1 cup BOB'S RED MILL GF mix or Montina GF mix
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
1 egg
1 cup milk
1/2 cup Plain Yogurt

Sift together gluten free flour, baking soda and baking powder. Combine in another bowl the egg, milk and yogurt and whisk. Pour liquid into flour mixture and stir until dry ingredients are blended with solids. Fry on a hot griddle turning once.

Fruit Syrup for pancakes or waffles.
combine in a sauce pan:
1/2 cup sugar
3 tablespoons cornstarch
add 2 cups water bring to boil stirring constantly add 2 cups fresh raspberries or fruit of you choice.
simmer until fruit is tender and add 2 tablespoons lemon juice. Serve hot over pancakes or waffles.
